I typically go to the market on Mondays so by Sunday night, we are literally searching for food in the house. One Sunday evening, I had a red pepper, mushrooms, and onion, some fava beans, and corn in the freezer and somehow managed to come up with something delicious. This recipe is super easy, flavorful, and filling. 

 

What you'll need to serve two: 

 

Corn, frozen or fresh, 1 cup

Red pepper, one, diced 

Fava beans, fresh, 1/2 cup

Mushrooms, portobella, 1 cup

Onion, diced, 1 medium 

Sesame oil, 2 T

Liquid Aminos (or your favorite soy sauce), 2 T 

 

To Create:

 

If you're using frozen corn, blanch (place corn in boiling water for about 2 minutes)  first and set aside. Chop onion, pepper, mushrooms and set aside. Saute all veggies in 2 T sesame oil for about 10 minutes or until desired texture is reached. Add soy sauce.
