What you'll need:
Ground Round, 1 1/2 pounds, look for grass-fed
Eggs, 2
Breadcrumbs (I use gluten free but you don't have to if you can tolerate gluten), 1/2 cup
Red onion, 1/2 large, diced
Feta cheese, 1/2 cup
Sundried Tomatoes, 1/2 cup, chopped
Garlic, 2T, minced
Onion powder, 1 T
Pepper, 1 tsp
Salt, 1 tsp
To Create:
Butter a large casserole dish and set aside. In a large mixing bowl, combine all of the above ingredients. Roll into golf ball sized balls. Place in casserole dish and bake at 350 degrees for 30 minutes. Let sit for about 10 minutes. The beef will continue to cook when you take it out of the oven.
